Grades, origins and what actually drives the price
Indian tejpata (Cinnamomum tamala) is the leaf Bangladeshi cooking actually calls for — longer, three-veined, with a cassia-like aroma. Mediterranean laurel (Laurus nobilis) is a different spice entirely, stocked for export packers and continental-food manufacturers who specify it.
Grading is on leaf size, intact percentage and colour retention. Faded, yellowed leaf is aromatically dead and we price it as such instead of passing it off as prime.
