Grades, origins and what actually drives the price
Cochin dry ginger carries the highest oil and the cleanest flavour, and is our recommendation for masala and beverage manufacture. Chinese origin is the price-competitive volume grade. Nigerian split ginger runs high in oleoresin and suits extraction buyers.
Unbleached ginger keeps a natural tan colour; bleached lime-coated ginger looks whiter and is preferred for some retail and export applications. We label which is which.
