Grades, origins and what actually drives the price
Lucknowi fennel is the small, intensely sweet grade used in mouth-freshener and paan applications. Standard Indian fennel serves masala manufacture and everyday retail. European origin runs larger and oil-rich, favoured by extraction and herbal-tea buyers.
Purity and colour are quoted honestly — faded or yellowed fennel is priced down, not re-described as prime green.
