Grades, origins and what actually drives the price
Indonesian Muntok white pepper is the benchmark: clean cream colour, 600+ g/l bulk density, minimal off-odour. Vietnamese white pepper offers a comparable specification at competitive pricing and has become the volume choice for sauce and seasoning manufacturers.
Because white pepper is produced by retting, poorly processed lots carry a distinct fermented smell. Those are rejected at sample stage.
